Wine 101 Tidbits: Basic principles of food-wine pairing:
* Match the weight and texture of the food to the weight and texture of the wine Ex. a light bodied fish like Talapia or Sole should be paired with a light bodied white wine like Pinot Griggio, while a heavier-bodied fish like Salmon should be accompanied by a Chardonnay.
*Balance the intensity of flavors in the food and wine Ex. a mild flavored chicken or pork pairs well with a light-bodied white like souvignon blanc and Beaujolais. Rich food or food with intense flavors pair well with a white like gewurztraminer or a rich, fruity syrah or zinfandel.
* Balance tastes Ex. a juicy, subtle flavor of steak brings out the fruit of a young cabernet souvignon. On the other hand, chocolate accentuates the tannins and lesens the fruit on the palate.
* Match flavors Ex. flavors are a combination of many tastes and aromas. Turkey with a rich cranberry sauce is well-served with a syrah, while grilled steak with a pepper sauce will be best served with a peppery zinfandel.
* Counterpoint flavors Ex. it my sound strange, but it in fact, a spicy, robust flavored food may not pair well with a big, fruity cabernet. Instead, try a lesser alcohol gewurztraminer or reisling to tame the spice of a dish.

The Albarino grape is reputed to be a relative of German riesling and may have been brought to Spain by monks as far back as the 12th century. It is grown in the Rias Baixas region of Galicia, which is snuggled in between Portugal and the Basque country on the rugged and beautiful Atlantic shores.Martin Codax is a name given to this white wine by the group of small producers who have banded together to make wine in the Bodegas de Vilarino-Cambados. This wine has floral overtones and is typified by the peach or melon aromas that are always present. A flinty, dry white, it is suitable for summer drinking and goes well with summer dishes such as salads or seafood. Our prediction is that Albarino wines will become excessively trendy as more people come to realise what amazing value for money they represent. We were lucky enough to try this at El Bulli in Spain and it is relatively easy to source. We buy it in Australia from Torres Cellars.
